Want to enjoy a scrumptious, animal-friendly dessert? Try this great recipe from PAWS' own Vicki Nelson. What makes it animal-friendly? Absolutely no animal ingredients, not even dairy or eggs, are required. Millions of animals suffer every year in mass production factory farms. If each of us makes an effort to pare down our consumption of animal products, we'd make a big difference in their lives.
Vicki's World Famous Vegan Chocolate Chip Oatmeal Cookies
1 cup margarine, softened
1 cup firmly packed brown sugar
½ cup raw sugar
3 teaspoons Ener-G egg replacer (find at natural food stores)
4 tablespoon water
2 teaspoons bourbon vanilla
1½ cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 cups oatmeal (preferably quick cooking oats)
1 package dark chocolate chips or 1½ cups raisins (soak raisins in hot water for 10 minutes, drain)
Preheat oven to 350°. Cream together margarine and sugar until light and creamy. Add egg replacer, water and vanilla, mix again until light and creamy. Fold in flour, baking soda, cinnamon and salt just until incorporated. Lightly fold in oatmeal and chocolate chips or raisins. Drop teaspoons of cookie dough onto un-greased cookie sheet. Bake 10 minutes or until golden brown. Let cookies cool on cookie sheet before transferring to a wire cooling rack. Enjoy!
