Gail Harasen has been preparing tasty vegan meals for PAWS staff members for close to ten years. Here Gail provides a special treat for PAWS members; an easy-to-prepare meatless Thanksgiving "Turkey" and stuffing dish. Ingredients Directions Preheat oven to 350° Sautée the celery and onion in a pan until tender. Set aside. Cut the tofu into ¼ inch thick strips, and brown the strips in a frying pan. Set aside. In a large bowl, mix the celery and onions with the bread cubes. Drizzle the vegetable broth onto the mix. Shake on desired amount of poultry seasoning, salt, and pepper to taste. Gently stir the whole mix. Pour the mix into a large, oiled baking pan. Cover the top of the mix with the pre-browned tofu strips. Cover the pan with foil and place in the oven. After 30 minutes, remove the foil and continue baking until the desired brownness is achieved (about 10 more minutes). Gail can provide precooked dinners, lunches, and meals for large and small groups. This Thanksgiving she will be cooking her famous mock "turkey" that is so good it’s scary. 1 cup of onion, diced
1 to 2 cups of vegetable broth (depending on the amount of bread cubes)
Poultry seasoning (found in the spice aisle; if unavailable, substitute with sage)
Salt
Pepper
Frozen Tofu (in freezer for at least a week!)
